Mysore Pak begins with a handful of plain ingredients: gram flour (besan), sugar and plenty of ghee, stirred together over a steady flame until the mixture turns light, porous and golden. Cut into squares and left to set, it comes out with the soft, honeycomb crumb that melts the moment it touches your tongue.
Arara Foods Mysore Pak is cut into thick, even squares and packed in a clear jar with a red screw lid, so you can see the honeycomb texture and the rich yellow colour before you open it. The label lists gram flour, sugar, ghee, edible oil and cardamom (elaichi), and the cardamom gives each piece a gentle, warm fragrance that lifts the ghee.
